  • 1 Teaspoon Salt
  • ½ Teaspoons Black Pepper
  • 2 Teaspoons Rosemary, Chopped
  • 3 Tablespoons Extra Virgin Olive Oil
  • Aioli
  • 4 Cloves of Garlic, Crushed
  • 1 Tablespoon Lemon Juice
  • 1 Teaspoon Dijon Mustard
  • ½ Cup Vegan Mayonnaise
  • 1 ¼ Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • 3-4 Tablespoons Extra Virgin Olive Oil
DIRECTIONS

  • Roasted Potatoes
  • Pre-heat the oven to 400 degrees.
  • In a bowl, add the rest of the ingredients for potatoes and mix.
  • Place them on a baking dish, cut side down and roast for 30 minutes, flip then cool for another 15 minutes.
  • Aioli
  • Add all of the aioli ingredients in a food processor and mix until blended and smooth.
  • Once the potatoes are done cooking, remove them from the oven and let them rest for 10 minutes.
  • Add the potatoes to a plate and drizzle the aioli sauce on top.
